Prep Instructions

Boil 1 cup Amaranth in 2 1/2 cups water with 1/4 tsp. salt. Bring down to medium heat and cook for 20-25 minutes or until tender. Makes 1 1/2 cups.

  • This organic, gluten-free grain is a great substitute for wheat because it’s high in the amino acid lysine, which wheat and other grains don’t have.
  • Cook it to eat it as a breakfast cereal, grind it and add the flour to baked goods, use it instead of couscous or rice, or add the cooked whole grains to breads to add texture and crunch.
  • Amaranth can be popped by cooking it dry over heat. Add butter or sugar and cinnamon to the popped grains for a fun snack!
