Try this great soup on a cold day!

  1. Make a roux by melting the butter in a small saucepan and mixing in the flour until well incorporated. Cook slightly and set aside.
  2. Combine all ingredients except the cream and the roux in a sauce pot.
  3. Bring to a simmer for about 10 minutes and then add the roux
  4. Let simmer for about 5 minutes, stirring regularly.
  5. Add cream all at once and stir in well.
  6. Bring to a simmer; taste and adjust seasoning if necessary.

Yield: 7 cups
