My family LOVES these. The

My family LOVES these. The hardest part is making sure that the sweet potatoes aren't still crunchy. My husband loves the not-so-sweetness of these over other muffins. We don't keep butterscotch chips on hand, so I usually substitute with either milk chocolate or mini chocolate chips.

Great flavor!

I would have given this recipe 5 stars for taste, but rehdrating & pureeing the sweet potatoes took twice the time I expected. The 2nd time I doubled the recipe so I could use them for a trip out of town. They froze beautifully!

I just tried this recipe. I like that there is no sugar in the recipe. The only thing I would change is the amount of butterscotch chips added to the recipe. That is only because they are not my favorite. Watch out, these are very filling! :) Overall a great recipe!
