Strawberry Almond Paleo Truffles 

When you're trying to eat healthy, it can be difficult to stay away from all the sweets and sugars, especially during Valentine's Day! So I have come up with an extremely scrumptious little morsel for you to make to share with your loved ones.

Or, keep all to yourself. I'm not going to say a word.

You will need a food processor for this no bake, easy to assemble, impressive looking treat.

Go ahead, make some and enjoy!

They're healthy enough to be tucked into lunch boxes, too!

My favorite thing about them? They are very satisfying so I don't have to worry about eating the entire batch. I may want to, but I can't. Really, isn't that how all desserts should be?

 

Strawberry Almond Paleo Truffles, by Holly Cooley

In Food Processor, process the following ingredients in order given,

running the processor after each addition:

1 ¼ C Thrive Freeze Dried Strawberry Slices

1/2 C raw almonds

1/3 C chopped dates

1 tsp THRIVE Vanilla Powder

a few shakes of salt

1 ½ Tbsp Almond or Cashew Butter

When all these ingredients are finely blended, slowly add 2 T water (more or less) till the consistency is good for forming into 1” balls.

Roll each ball in fresh coconut flakes (I use the BirdsEye frozen kind) and place in small, decorative cupcake papers.

Store in covered container in Fridge. Tada!
