Cranberry Cornbread by Chef Todd Leonard

A sweet and tangy twist on traditional cornbread!

Prep Time: 1 hour
Yield: 12 Servings
 
Ingredients
1 c thrive cranberries (fd) 1⁄4 c thrive white sugar 1⁄4 c orange juice 1 1⁄3 c water 1 can thrive golden cornbread mix (from party pack)
Instructions

Pulse cranberries in a food processor until in pea-sized pieces . Mix with sugar, orange juice, and ⅓ cup water. Let sit for 10–15 minutes. Add remaining water and cornbread mix and stir until smooth. Bake in a greased 9x9 pan at 375⁰F for 25–35 minutes.
