Apple Pie Snack Mix

Ingredients
- 1 C THRIVE Coconut Bites
- 1 C THRIVE Granny Smith Apple Slices
- 1 C Walnut Pieces
- 1 Tbsp Coconut Oil
- 1/4 tsp Vanilla Extract
- 1/2 tsp Pumpkin or Apple Pie Spice
- 1/4 tsp Sea Salt
Directions
- Break up apples into smaller bite size pieces and toss with coconut bites.
- Sprinkle with pie spice and 1/8th teaspoon salt.
- Place a heavy skillet on the stove and melt 1 Tbsp Coconut oil over medium heat.
- Add the walnuts to the melted oil and mix to coat the nuts.
- Add the vanilla extract, 1/4 tsp of pie spice, and 1/8 tsp salt. Continue stirring.
- The oil will form a glaze over the walnuts. Let this go another 2-3 minutes, then remove from heat and allow to cool before mixing with apples and coconut bites.
- OPTIONAL: Add chocolate chips once mix has cooled or add 1 tsp maple syrup to coconut oil.
