Curry Chicken and Broccoli with PB

This is a very simple and tasty rice dish that I usually make to take with me to work. The peanut butter powder adds a nice rich flavor to the curry.

Ingredients
- 1/4 cup instant rice
- 1 Tbsp Peanut Butter powder
- 2 Tbsp Coconut milk powder
- 1/4 cup FD diced chicken
- 1/4 cup FD broccoli
- 1/8 cup FD bell peppers
- 1/2 tsp curry powder
- 1/4 tsp garlic granules
- 1 tsp chicken bouillon
- 1 tsp FD chopped onion
- 1/4 tsp salt
- 3/4 cup boiling water
Directions
- Put all ingredients in a microwave safe container.
- Let sit for about 5 minutes.
- Place in microwave and cook for 2 minutes.
- Let sit for 5 minutes until rice is tender.
- Repeat last 2 steps (reduce microwave time to 1 minute) if rice isn’t fully cooked.
- Adjust seasoning to taste and enjoy!
