This recipe is a great, fast meal to put together for a filling dinner for the whole family, while sneaking lots of veggies into it!

Ingredients

  • Mashed Potatoes
  • 6 C Water
  • 3 1/2 C THRIVE Mashed Potatoes
  • 1/2 C THRIVE Butter Powder
  • 1/4 C THRIVE Sour Cream Powder
  • 1 tsp Dried Rosemary
  • 1 tsp THRIVE Chefs Choice
  • 1/2 tsp Iodized Salt
  • Filling
  • 2 C THRIVE Ground Beef (Hamburger)
  • 1/2 C Mixed Bell Peppers
  • 1/2 C THRIVE Chopped Onions
  • 1/2 C THRIVE Chopped Spinach
  • 1 C THRIVE Green Beans
  • 1/4 C THRIVE Tomato Powder
  • 2 Tbsp Worcestershire Sauce
  • 1 tsp Garlic Powder
  • 1 tsp THRIVE Chefs Choice
  • 2 C Water
  • Topping
  • 1 C THRIVE Shredded Cheddar Cheese

Directions

  1. Preheat oven to 350 degrees. In a saucepan, bring 6 cups water to boil.
  2. Meanwhile, combine ground beef, peppers, and onion in a bowl, and put just enough water over everything to cover it all. Let sit to rehydrate.
  3. In a small bowl, rehydrate cheddar cheese with just enough water to moisten it. Stir gently.
  4. Once the water in the saucepan is boiling, stir in all ingredients for the mashed potatoes. Turn off stove, and wisk together until texture is smooth.
  5. In a separate saucepan, heat 2 Tbsp. vegetable oil on medium high heat. Then dump in rehydrated meat mixture and saute for a couple of minutes.
  6. While meat is cooking, combine in a bowl the spinach, green beans, and tomato powder with the 2 cups of water. Dump it all into the meat mixture in the saucepan, along with the seasonings. Cook and stir until mixture is heated through and thickened.
  7. Assemble the Shepherd's Pie in a 9x13 casserole dish. First, spread the meat mixture on the bottom of the casserole dish. Then spread the mashed potatoes over the meat mixture. Finally, sprinkle the cheese on top of the mashed potatoes.
  8. Bake in the oven for about 15 minutes, until the cheese is melted and casserole is bubbly.
