Ingredients

  • 2 c. Hard White Wheat berries (see preparation instructions below)
  • 1 c. THRIVE Fuji Apple Slices
  • 1/2 c. pecans
  • 1/4 c. Simply Peach
  • 1/4 c. Raspberry vinaigrette dressing

Directions

  1. To prepare wheat berries:
  2. Wash three cups of THRIVE hard white winter wheat berries. Put wheat together with 7 cups cold water in a large pot. Bring to a boil, stir, and turn heat down to simmer.
  3. Simmer wheat for about one hour, stirring every ten minutes. Drain excess water from wheat. Berries can be used immediately or stored in the refrigerator for later use.
  4. Mix all ingredients in a medium size bowl. Let stand for 1 hour. Spoon mixture onto a plate, over a lettuce leaf, and serve at room temperature. Salad can also be chilled.

  6. In a small bowl, spritz THRIVE fruit with warm water and let sit 5-10 minutes or until softened and rehydrated.
