Wheat Berry Salad

Use Hard White Winter Wheat to make this fruity salad.

Ingredients
- 2 c. Hard White Wheat berries (see preparation instructions below)
- 1 c. THRIVE Fuji Apple Slices
- 1/2 c. pecans
- 1/4 c. Simply Peach
- 1/4 c. Raspberry vinaigrette dressing
Directions
- To prepare wheat berries:
- Wash three cups of THRIVE hard white winter wheat berries. Put wheat together with 7 cups cold water in a large pot. Bring to a boil, stir, and turn heat down to simmer.
- Simmer wheat for about one hour, stirring every ten minutes. Drain excess water from wheat. Berries can be used immediately or stored in the refrigerator for later use.
- Mix all ingredients in a medium size bowl. Let stand for 1 hour. Spoon mixture onto a plate, over a lettuce leaf, and serve at room temperature. Salad can also be chilled.
- Directions:
- In a small bowl, spritz THRIVE fruit with warm water and let sit 5-10 minutes or until softened and rehydrated.
