Zucchini in Cream Sauce

This baked zucchini dish has mild flavor that will go with any meat dish.

Ingredients
- 1 1/4 C THRIVE Zucchini
- 1/2 C THRIVE Mushroom Pieces
- 1/3 C Mayonnaise
- 1 tsp THRIVE Italian Seasoning Blend
- 1/8 tsp Peppercorn
- 1 dash Salt, Table
- 3 Tbsp Shredded Parmesan Cheese
- 2 Tbsp Heavy Whipping Cream
Directions
- Pre-heat oven to 325.
- Place Zucchini and mushrooms in a bowl and add just enough water to re-hydrate, toss with spoon to get all the veggies wet.
- Add the rest of the ingredients, reserving 1 tbs of Parmesan and blend.
- Pour into an oven safe bowl and top with remaining Parmesan cheese.
- Bake covered for 15-20 min.
