Balsamic Demi-Glace

  1. Sweat 1 Tablespoon of butter with the garlic in a small sauce pan.
  2. Add in the onions, basil and seasoning to slightly toast.
  3. Add in the water and simmer for 2 minutes.
  4. Add in the espagnole powder slowly while whisking.
  5. Simmer for 3 minutes.
  6. Strain sauce through a fine strainer.
