"Gimme Thrive" Low Carb Broccoli Cheddar Soup

  1. Add the butter and garlic to a soup pot and saute the garlic for about 30 seconds. Add onion slices and saute for another 30 seconds.
  2. Add water, bouillon, and broccoli. Simmer for about 5 minutes, or until broccoli is fully refreshed.
  3. Soften the cream cheese in the microwave until it's very soft and stir-able. Add this to the soup, along with the cream and seasonings. Bring to a boil, then remove from heat.
  4. Dump in the cheddar cheese and stir while the cheese melts.
  5. If you would like a thicker soup, sprinkle the xanthan gum over the top and stir or whisk in well. Allow to sit for a few minutes, then serve.
