"Gimme Thrive" Paradise Pie

by Julie Finlayson

  1. Preheat oven to 325 degrees.
  2. Prepare the Dough Portion
  3. Cream the butter in a mixing bowl with a hand mixer. Add in the cookie dough mix and the milk and mix until blended evenly. Add the coconut and stir by hand to combine. Set aside.
  4. Prepare the Crust
  5. In a small mixing bowl, combine the melted butter, sugar, and graham cracker crumbs. Stir well to combine.
  6. In a greased 9x9 square pan, press the crust mixture evenly in the bottom.
  7. Prepare It For Baking
  8. Pour the semisweet chips over the crust.
  9. Carefully press the cookie dough evenly over the chocolate chips.
  10. Pour the chopped walnuts evenly over the dough and gently press into the dough.
  11. Bake for 40-45 minutes or until the edges are a light golden brown.
  12. Assemble the Dessert
  13. Once the pan of "pie" has cooled, cut it into 9 squares.
  14. Mix the melted butter, sugar, and cinnamon. Place about 1 Tablespoon of this mixture into an individual cast-iron skillet and place over medium low heat to sort of caramelize the sugar.
  15. Remove skillet from heat and place a pie square in it. Top with ice cream, hot fudge, and caramel. Enjoy!
  16. (If you don't have mini cast iron skillets, you could heat the melted butter mixture in a saucepan or skillet and then pour portions into bowls. Assemble the rest of the dessert as directed. You could skip the butter mixture altogether, but it makes the dessert extra special!)
