THRIVE Lasagna

  1. Cook lasagna noodles.
  2. Melt butter in a large pan and sauté next five ingredients until dry; deglaze with red wine and let reduce until almost dry.
  3. Add all other ingredients except spinach, Chef's Choice, and cheeses and let reduce to consistency of sauce.
  4. Fold in parmesan cheese and remove from heat.
  5. Reconstitute spinach and mix with cottage cheese, Chef's Choice, and half of mozzarella cheese.
  6. Spread sauce on bottom of 9x13 pan. Layer noodles, spinach mixture, and sauce and top with remaining mozzarella.
  7. Bake at 350F for 30 minutes covered and 20 minutes uncovered, or until brown and bubbly.
