Enchilada Sauce (Espagnole)

  1. In a small saucepan, combine all ingredients except sour cream and simmer for 4–5 minutes.
  2. Puree sauce in blender until smooth.
  3. Return to stove and heat to a simmer. Turn off heat and fold in sour cream.
  4. Fill and top enchiladas with sauce.
