Hunter Sauce (Chasseur)

  1. In a small saucepan, sweat the butter and garlic until tender.
  2. Add mushrooms and seasoning and stir in. Add wine and reduce by half.
  3. Add ½ cup water and tomatoes and reduce until syrupy.
  4. Add remaining ingredients and bring to a simmer for 3–4 minutes. Allow to rest 3–4 minutes before serving.
