Chef Todd's Dutch Oven Biscuits

  1. In a large bowl, cut butter into dry ingredients.
  2. Fold in bacon (with some grease for flavor) and remaining ingredients. Mix until just moistened, careful not to over mix.
  3. Knead dough only 4 or 5 times and roll dough about an inch thick on a floured surface.
  4. Cut biscuits with a ring mold and place touching each other in a greased Dutch oven. Brush tops with butter.
  5. Cook with 30 coals on lid (24 around edges and 6 in the center) and 9 underneath (6 around perimeter and 3 in the center).
