Chef Todd's Peach Cobbler

  1. Combine all filling ingredients in a saucepan and bring to a simmer. Let simmer for 5 minutes, then pour into an 8x8 baking dish.
  2. Combine all cake ingredients in a bowl and whisk until smooth. Spoon batter evenly over peach filling.
  3. Combine all streusel ingredients in a bowl and cut butter into flour until crumbly and cornmeal-like. Sprinkle over cake batter.
  4. Bake for 30 minutes at 400⁰F or until bubbly and golden brown.
