Hearty Vegetable Spelt Soup

  1. Sauté butter and garlic until caramelized. Add spelt and toast.
  2. Deglaze with white wine until mixture is reduced by half.
  3. Add all remaining ingredients except spinach, basil, and parsley. Cook covered for 45 minutes on medium simmer.
  4. Add spinach and herbs and simmer for 2 more minutes. Remove from heat and serve.
