Savory Beef Stroganoff (Espagnole)

  1. While noodles are cooking, sauté onions in butter until translucent. Add garlic and sauté until lightly caramelized.
  2. If desired, add sherry and cook until only half the liquid remains.
  3. Add all remaining ingredients except sour cream and noodles, and simmer about 5 minutes or until thickened.
  4. Fold in sour cream and toss mixture into noodles.
