Cauliflower Mashed Potatoes

Directions

  1. Peel and dice russet potatoes; boil on stove until soft.
  2. Meanwhil,e combine all remaining ingredients except cheeses and simmer in a small saucepan for 5 minutes.
  3. Pour cauliflower mixture into blender and puree until smooth.
  4. Mash potatoes once soft and mix in cauliflower puree. Add cheeses and stir to combine.
