Thrive Fresh Pea Pesto on Crostini

Sweet fresh peas blended with slightly salty parmesan and a good olive oil makes a delicious spread to use on crostini, as a veggie dip or even as a sauce on hot pasta!

  1. Hydrate peas in approximately 1/2 cup water, stir and let sit about 3 minutes, stir again. Add more water if necessary. You want nice moist peas.
  2. Place all the ingredients, with the exception of the bread, in a blender or food processor.
  3. Blend until nice and smooth. Depending on the peas you may need to add a bit more oil, or a bit more water. Season to taste.
  4. I used a French Baguette but you can usse any bread you like. Ciabatta or Italian bread works just as well. Slice 1/2" think, brush with oil and grill or broil until golden brown. This should take 1-2 minutes per side.
  5. Spread pesto on your cooled bread and your are free to garnish as you like. Try cherry tomato halves, fresh herbs, pine nuts, and ship are just a few suggestions.
