  1. Disolve yeast in warm water.
  2. Add the dough mix, smashed roasted garlic, Italian seasonings, and mix well.
  3. Kneed for approximately 5 minutes or until gluten forms. I use the dough hook with on my mixer to do the kneeding for me.
  4. Form dough into a ball, lightly coated with oil. I put mine back into the mixing bowl and over with a dish towel or plastic wrap.
  5. Place in a warm, draft free area until doubled in size. Approx. 40 minutes.
  6. Divide your dough into 12 equal balls.
  7. One at a time, slightly flatten each ball so you can add the mozzarella cheese to the center. Cover with dough and shape back into a nice ball.
  8. Lightly spray your baking dish with cooking spray.
  9. Place your finish dough balls in a warm, draft free area. Allow to double, approximately 1 hour.
  10. Bake in a 350 degree oven. Let cool, on cooling rack, for about 15 minutes before serving.
