For a dish with a bit of an Asian flair, try this Thai Peanut Chicken. This is a simply dish that can be served as is or dressed up very elegantly.

  1. In your cooking pot, add the water and chicken. Stir and let hydrate for about 10 minutes.
  2. Add the Peanut Butter Flour and stir well to blend.
  3. Add the rest of your ingredients, not including the garnish, stir.
  4. Simmer for approximate 15 minutes.
  5. Taste to make sure it is seasoned to your liking.
  6. Garnish and serve.

  9. • Chef’s note: Chicken can be served over rice, noodles or used as a wrap in lettuce leaves. I love serving with rice, crispy cold bean sprouts and very thinly sliced carrot strips. I like the contrast of the hot chicken and vegetables with the cool crunchy vegetables.
  10. • This works well as a crock-pot dish. Place rice and water in the bottom. Mix chicken recipe and place on top of the rice. Cook on high 1 ½ to 2 hours.
