Brew a caramelized onion demi-glace without chopping a single onion.

  1. Reconstitute the onions with the water.
  2. Add in garlic and saute. Deglaze the pan with sherry. Simmer down by half.
  3. Add in the seasonings and stir.
  4. Add water and bring to a simmer, then whisk in the espagnole sauce.
  5. Take off heat and swirl in remaining tbsp. of butter to finish.
  6. You can strain or leave onions in according to your desire.
