Apricot Couscous

Based on a recipe my mother in law made years ago - it remains a favourite of mine. Now made even easier of course, by thrivealizing it. Just the perfect amount of zip to go with the orange/apricot flavour. ummmm hmmm - Thanks Mom for the legacy.

  • 1 1/2 c. Water
  • 1/2 c. Orange Juice
  • 2 tbsp. Olive Oil
  • 1/4 tsp. Salt, Table
  • 1/4 tsp. Cayenne Powder
  • 1 tsp. Ground Ginger or 1 Tablespoon of freshly minced ginger
  • 1 c. Dry Couscous
  • 1/2 c. THRIVE Apricot - Freeze DriedTHRIVE Apricot - Freeze Dried or a little more if desired
  • 1/4 c. Seedless Raisins (optional but nice)

  1. Bring water, juice, oil, salt, cayenne and ginger to a boil.
  2. Stir in couscous, apricots and raisins.
  3. Boil 1 minute. Stir. Cover and remove from heat.
  4. Let sit 5 minutes, then fluff with fork and mound onto serving dish.
  5. Garnish with fresh parsley.

Serve alone or with some cottage cheese for lunch. Serve with pork or chicken for supper. Make extra so you can have leftovers.
