"Gimme Thrive" Itty Bitty Pancake Muffins

Forget the griddle; make breakfast a snap with these quick baking pancake muffins. These also freeze well. Variations: add chocolate chips, Thrive sausage (reconstituted first), Thrive freeze dried berries (reconstituted first). Makes 3.5 dozen mini muffins.

  • 3 c. 10 Grain Pancake Mix
  • 2 c. Water


  • 4 tbsp. melted butter

  1. Preheat oven to 425 degrees.
  2. Spray a mini muffin pan with nonstick cooking spray.
  3. Combine pancake mix and water. Stir together until thoroughly combined.
  4. Fill mini muffin pan cups 2/3 full. (Use a 1.5" cookie scoop if you have it.)
  5. Bake for 8-9 minutes.
  6. Brush with melted butter. Remove from pan and serve with maple syrup.
