"Gimme Thrive" S'mores Cookie Cups

Bring the campfire inside with these easy S'mores Cookie Cups! Makes about 3 dozen.

  • 1 c. butter, softene
  • 2 1/3 c. THRIVE Classic Cookie Dough MixTHRIVE Classic Cookie Dough Mix
  • 5 tbsp. water
  • 1 1/4 c. graham cracker crumbs
  • 8 oz. milk chocolate (candy bar, mini chips, or finely chopped block chocolate)
  • 18 large marshmallows

  1. Preheat oven to 350 degrees and grease a mini muffin pan.
  2. In a mixer, cream the butter for a few minutes until smooth and creamy.
  3. Add the cookie mix and the water. Mix well.
  4. Add the graham cracker crumbs. Mix well.
  5. Using a 1.25" diameter cookie scoop, place level scoopfuls into each mini muffin cup. Bake for 11 minutes.
  6. Immediately after taking out of the oven, use the back of a melon baller to make a bowl-like indentation in each cookie. Then fill with about 1/2 Tablespoon of milk chocolate.
  7. Set oven to broil and adjust rack.
  8. Using kitchen shears, cut each marshmallow in half and place cut-side down over the chocolate on each cookie, pressing down slightly.
  9. Set pan under broil until marshmallows are golden brown. Remove from oven and allow to sit for a couple of minutes.
