Directions:

  1. Put mango, diced red pepper, diced cucumber and chopped onion into your salad bowl.
  2. In a separate bowl whisk together nice light vegetable oil of your own choice, limeade, honey crystals and water.
  3. Drizzle dressing over mango vegetable mixture and toss with a spoon to make sure everything gets coated.
  4. Sprinkle chopped cilantro in and toss again.
  5. Let it sit about 5 minutes so that mangoes can absorb some of the liquid. I like it when the mangoes are still a bit crunchy, like the peppers and cucumbers.
  6. Serve with chips, as a side dish or even as a salad.
  7. Usually you let a fresh mango salsa sit for a couple of hours before serving to let the flavours mingle, but the only 'flavours' we're adding here are lime and cilantro so you can eat it after a few minutes - giving the mangoes and onions a chance to plump up.
