Gluten Free Crepes with Apple Pear Filling

Delicious, gluten free, and a wonderful alternative for dessert, breakfast, or whenever!

  1. Crepes: Mix all dry ingredients together. Add in wet and mix until smooth.
  2. Allow to rest 10 minutes.
  3. Cook in Teflon pan with some butter or oil.
  4. Filling: Refresh apples and pears together with 1 cup of water. Set aside.
  5. Melt butter in a pan and add in refreshed fruit. Saute for a minute or two.
  6. Add in remaining ingredients, except for the marscapone cheese, and bring to a simmer. Cook for about 2 minutes, or until thickened. Cool slightly and mix in marscapone cheese.
  7. To assemble, evenly spoon the filling on each crepe. Fold up and sprinkle with powdered sugar. Enjoy!
