Corn Chowder with Sausage - MIJ

I found a recipe for "Corn Chowder with Bacon" in a magazine at the hair salon. I knew it would be so easy to "thrivelize" and with a few tweaks, would be perfect as a Meal-in-a-Jar. This recipe is the result of those tweaks. Rich and Creamy. Flavourful. Completely satisfying. A hearty soup to serve on a nice crisp autumn day.

  1. To prepare, simply add the ingredients into a pot with water. Bring to a boil stirring to prevent scorching.
  2. Reduce heat and gently simmer till potatoes are tender - 20+ minutes. Stir frequently to prevent lumping.
  3. Let it sit for a about 5 minutes before serving.

to make a Meal in a Jar (MIJ)

  1. Layer the dry ingredients into a quart sealer. I begin with powders and end with sausage. Looks lovely.
  2. Personally I don't 'seal' my jars. I am not looking for 5 year shelf life. I am merely looking for convenience in my pantry.
  3. The serving for 4 will fit snugly into a quart jar.
  4. if you have a little room in the jar, top it up with as much corn as you can fit in
