Lemon Cranberry Scones

I don't know what it is about Cranberries. About September I start craving them. I love all-things-cranberry. I love their tartness, their unique 'cranberry' flavour, and their gorgeous colour which lasts all thru cooking. I add them to muffins, and porridge, baking, casseroles, and salads. My one 'seasonal' exception is that in the summer I add them to strawberry and raspberry jam to keep the vibrant red colour naturally and to help 'set' the jam. .... and now, THRIVE makes it all easier. With freeze dried cranberries. ..... Remember, its a seasonal product so buy lots while you can. So you can make Cranberry Scones all winter long. Perfect as a mix-in-a-jar. Just add water. How easy is that?

  1. preheat oven to 425 degrees
  2. Sift all dry ingredients together to mix well.
  3. add cranberries and mix to incorporate
  4. add water and stir until a solf, sticky dough forms
  5. turn out onto a lightly floured surface and gently knead to form a smooth dough. Try not to crush the berries, and do not over knead. Just until nice and 'together', lightly flouring the board as necessary, but not too much.
  6. Pat out with your hands (lightly floured to prevent sticking) to desired even thickness. About 9 inch circle.
  7. Either cut into 12 wedges or cut with round biscuit cutter. Should make about 12 round biscuits.
  8. Place on parchment lined baking sheet and bake for 12-15 minutes.
  9. you want them slightly browned, but watch that you don't over cook them or that will dry them out
  10. when fragrant and lightly browned, remove from over and allow to sit for a few minutes to cool

optional drizzle

  1. if desired, drizzle lightly with icing sugar and milk mixture before serving or allowing to cool
  2. in small bowl, mix small amount of milk into Icing sugar with fork till completely smooth. Adding more till desired consistency, a small amount at a time.
  3. Lightly drizzle over top of warm scones.
  4. Serve warm with fresh butter
