Whip it up on the spot, or use up some leftover mashed potatoes. Either way, it's a great recipe and the tortillas are soft and pliable. And tasty!

  1. Boil the water in a saucepan. While you wait, pour the mashed potato flakes into a medium bowl.
  2. Pour the boiling water into the mashed potato flakes and stir well. Allow to sit until the mashed potatoes are cool enough to handle.
  3. Add in the flour and the salt and mix together with your hands, kneading until you get a slightly sticky dough.
  4. Divide the dough into 8 equal pieces, shaping them into a ball. On a floured surface, gently roll out each ball to about a 6-7" diameter.
  5. If you want to roll out all the dough before cooking, make sure you don't stack them on top of each other as they will stick to each other. Place a piece of waxed paper between them. Or you can roll one out while another is cooking.
  6. In a cast iron or non stick skillet on medium heat, cook the tortillas one at a time for about 2-3 minutes on each side or until deep golden brown spots appear.
