Peanut butter and banana sandwiches conjure up fond memories of comfort and home for me. From my own childhood, and from my kids' childhoods. This quick (milkshake-like) smoothie has the delicious richness of peanut butter and banana, finished off with the smooth, thickening creaminess of oats. Oats are not only low in calories and a good source of protein, but also a great source of soluble fibre that is filling and satisfying. The gentle sweetness of bananas prevents the need to add sugar or honey, and the splash of vanilla adds the extra richness that finishes it off. Yup, this has become a fave in our house.
