  1. In a 2-quart sauce pan cook the peppers, onions, and corn with the water until browning occurs.
  2. Add salsa, tomato dices, and chicken broth to the pot and bring to a simmer.
  3. Stir in rice, seasonings and cheese; cover and let stand for 10 minutes.
  4. Fluff with a fork and serve.
