BBQ Chicken Quesadillas

  1. Reconstitute chicken by adding enough warm water to cover it. Let rest for 10 minutes and drain any excess water.
  2. Stir barbeque sauce into sour cream until well incorporated. Mix chicken into sour cream mixture until well coated.
  3. Place tortillas on clean surface and spread ¼ of the chicken mixture on each. Add 1/2 cup cheese on top of chicken mixture.
  4. Fold tortillas in half and place on a greased pancake griddle at 325F for about 3 minutes on each side, or until cheese melts and tortilla begins to brown.

To add some relish to your quesadillas, reconstitute ½ cup THRIVE Green Bell Peppers, ½ cup THRIVE Red Bell Peppers, and 2 tbsp. THRIVE Chopped Onions by covering in water, letting stand for 5 minutes, and draining excess liquid. Sauté peppers and onions with a little olive oil on high heat, season with seasoned salt, and sprinkle inside the quesadillas. Try adding some guacamole to finish.
