Try this simple, delicious chicken salad for a quick lunch. Serve it on croissants with green leaf lettuce!

  1. Reconstitute chicken, onions, and celery by covering them in water; allow to sit for about 10 minutes and drain any excess water.
  2. Chop chicken into smaller pieces if desired.
  3. Mix all ingredients together and let sit in refrigerator for 1 hour. Mix again before serving.

Yield: 2 1/2 cups
