  1. Combine onions, garlic, mushrooms, herbs, water, and butter in a small skillet and bring to a simmer, stirring frequently. Reduce until mostly dry.
  2. Cook spelt according to directions on can, and prepare potato beads as mashed potatoes according to directions on can.
  3. Fold together vegetable mixture, spelt, potatoes, and parmesan.
  4. Form mixture into small patties and coat with bread crumbs.
  5. Fry in a pan with olive oil and butter until browned.

Yield: 12 cakes
