  1. In a medium saucepan or dutch oven, sweat the garlic and the butter together.
  2. Add the mushrooms, celery, onions and rice and stir well. Add the water and bouillon.
  3. Add remaining ingredients and bring to a simmer for 20 minutes. Reduce the liquid until thick and creamy.
  4. Taste and adjust the seasoning as needed and fold in the cheese. Let rest for 5 minutes before serving.

Yield: 6 cups
