Ingredients:

  • 1/3 c. cornstarch
  • 16 oz. chicken breast, cut into strips
  • 1 tbsp. sesame oil
  • 2 tbsp. vegetable oil
  • 1/2 tbsp. garlic, minced
  • 3/4 c. onions, cut into strips
  • 3/4 c. red bell peppers, cut into strips
  • 1/2 c. Cane Sugar
  • 3/4 c. ketchup
  • 1 1/4 c. chicken broth
  • 1 c. pineapple juice
  • 1/2 c. THRIVE Green Beans - Freeze DriedTHRIVE Green Beans - Freeze Dried
  • 1/2 c. THRIVE Mushroom Pieces - Freeze DriedTHRIVE Mushroom Pieces - Freeze Dried
  • 3/4 c. THRIVE Pineapple - Freeze DriedTHRIVE Pineapple - Freeze Dried
  • 1/2 c. rice vinegar
  • 2 tbsp. soy sauce
  • 6 c. white rice, cooked

Directions:

  1. Mix 2 tbsp. of the cornstarch with 3 tbsp. water to make a slurry; set aside. Coat chicken slices with remaining cornstarch.
  2. Add oils to a heated wok, then brown chicken in it. Add garlic, onions, and peppers and fry together.
  3. Stir in sugar and ketchup. Deglaze pan by adding broth and pineapple juice.
  4. Add all remaining ingredients except cornstarch slurry and allow to simmer for 5 minutes.
  5. Add cornstarch slurry and simmer 1 more minute. Serve over steamed rice.

Yield: 6 cups
