This recipe is comfort food for us. It is gluten free and paleo. You may add pasta if you like, and feel free to spice it up. I often combine the ingredients for this recipe and pre-make several meals at one time--super convenient.

  1. Combine ingredients with 8 cups of hot water and simmer for 10 minutes, until chicken is tender and hydrated.
  2. Can add extra salt and seasoning if desired.
