Cheesy Chicken & Broccoli with Rice

Some things are just wonderful. This dish reminds me of one I used to make in the oven when my kids were young. It seemed simple then, but that was before I discovered THRIVE and really understood what 'simple' was. And now, how easy is "Just add water, bring to a boil and turn the heat off"? Even easier when you use it as a meal-in-a-jar. The "cook-time" is mostly let it sit on its own time.

  1. Cook rice: Add rice and bouillon to 4 cups water. Bring to boil. Turn heat to low and simmer covered for 15 minutes. I usually turn the heat off a few minutes early and let it just finish steaming on its own for a few minutes.
  2. Sauce: Pour remaining ingredients into medium soup pot with 3 cups Hot water. Bring to a rolling boil. Stir to prevent sticking or scorching.
  3. Once sauce has reached a good boil, turn heat off and let sit uncovered for about 15 minutes to plump up chicken and vegetables.
  4. To prevent nutrient loss, don't cook the chicken mixture past bringing it to a rolling boil. There is no need, as the meat is already cooked. You're only giving it the opportunity to "plump-up".
  5. To serve, spoon rice onto plate and top with Cheese Chicken Broccoli sauce.

Baked Option

  1. Spread cooked rice in flat baking dish, and top with Cheesy Sauce. Top with bread crumbs and bake 350 degrees for 15 minutes.

Soup Option

  1. To make soup instead of sauce, simple double the water. Serve over top rice in your bowl.
