Baked Oatmeal with Berries and Ginger

Ingredients
- 2 1/2 C Quick Oats
- 1/4 C Cane Sugar
- 1/4 C Candied Ginger, diced
- 1 tsp Baking Powder
- 2 tsp Ground Cinnamon
- 1 pinch Ground Cloves
- 1 tsp Iodized Salt
- 2 C THRIVE Instant Milk - Hydrated and chilled overnight
- 1 Tbsp THRIVE Whole Egg Powder Mix with 2 Tablespoons Water
- 3 Tbsp Butter, Melted and Cooled
- 3/4 C THRIVE Banana Slices - Hydrated
- 1/2 C THRIVE Blueberries - Hydrated
- 1/2 C THRIVE Blackberries - Hydrated
- 1/2 C THRIVE Raspberries - Hydrated
Directions
- Preheat over to 375 degrees. Butter an 8" square baking dish.
- In a large bowl, combine the oats, sugar, ginger, baking powder, spices and salt.
- In a small bowl whisk together milk, egg and melted butter.
- Place the bananas in the bottom of the prepared dish so that they cover the bottom.
- Cover bananas with a third of the berries. Spoon in the oat mixture and then pour in the milk mixture.
- Press the remaining berries into the oats and sprinkle the top with cinnamon.
- Bake for 35-45 minutes, until the mixture is bubbling vigorously and the edges are lightly browned.
