BBQ Chicken Quesadillas

Ingredients
- 4 flour tortillas, medium size
- 2 c. THRIVE Shredded Cheddar Cheese - (reconstituted)
- 1 c. THRIVE Seasoned Chicken Slices
- 2 tbsp. THRIVE Sour Cream Powder (reconstituted)
- 1/4 c. barbecue sauce
Directions
- Reconstitute chicken by adding enough warm water to cover it. Let rest for 10 minutes and drain any excess water.
- Stir barbeque sauce into sour cream until well incorporated. Mix chicken into sour cream mixture until well coated.
- Place tortillas on clean surface and spread ¼ of the chicken mixture on each. Add 1/2 cup cheese on top of chicken mixture.
- Fold tortillas in half and place on a greased pancake griddle at 325F for about 3 minutes on each side, or until cheese melts and tortilla begins to brown.
- To add some relish to your quesadillas, reconstitute ½ cup THRIVE Green Bell Peppers, ½ cup THRIVE Red Bell Peppers, and 2 tbsp. THRIVE Chopped Onions by covering in water, letting stand for 5 minutes, and draining excess liquid. Sauté peppers and onions with a little olive oil on high heat, season with seasoned salt, and sprinkle inside the quesadillas. Try adding some guacamole to finish.
