Ingredients

  • 1 C Thrive Scrambled Egg Mix
  • 1 1/2 C Water
  • 1 Tbsp Thrive Instant Milk Powder
  • 1/4 c. Thrive Green Chili Peppers
  • 1/4 c. Thrive Red Bell Peppers
  • 1 Tbsp Thrive Chopped Onions
  • 1/2 c Thrive Sausage Crumbles
  • 1 tsp Season Salt
  • 1 Tbsp Cholula Hot Sauce
  • 1/4 c Fresh Cilantro Leaves, finely chopped
  • 8 Flour Tortillas (6-8 inch)
  • 1 1/2 c Thrive Shredded Cheese, reconstituted

Directions

  1. Mix Scrambled Egg Mix powder with water and milk powder to reconstitute.
  2. Reconstitute peppers, sausage, and onions by placing them in a small bowl and just covering with water.
  3. Allow to sit for 5 minutes and drain any access water.
  4. In a skillet on medium high heat, saute peppers, onions and sausage together until slightly browned.
  5. Add season salt, hot sauce, and cilantro to pan and stir will to incorporate.
  6. Beat Egg mixture, add to hot skillet, and stir in.
  7. Cook to scramble, stirring occasionally to get fluffy eggs.
  8. Warm tortillas, put 1/2 c of scrambled egg mixture on each one and top with cheese.
