Ingredients

  • 1 Cup Thrive sausage
  • 1 Cup Thrive Diced Potatoes
  • 1 Cup Thrive Red Bell peppers
  • 6 Thrive eggs ( mix 2 TBSP powder to 3 TBSP water for each egg)
  • 1/2 Cup Thrive Onion Dices
  • 1 Clove Garlic or 1 TBSP Thrive Garlic
  • 6-8 TBSP Olive oil
  • 1 tsp Salt
  • 1 tsp Thrive Chef's Choice seasoning
  • 8 Tortillas or Thrive Gluten Free crepes- See recipe
  • Grated cheese as topping
  • Ketchup or salsa as topping

Directions

  1. In a medium container add sausage, potatoes, peppers, onions and garlic. Add about 1 cup water to refresh. Put on a lid and shake then let sit for 3-5 minutes to refresh. Add olive oil to warm skillet and add the refreshed food to the skillet.
  2. While it cooks, mix the eggs and add to the pan. Add seasonings and cook until the eggs are done.
  3. Add filling to a tortilla or gluten free crepe. Top with cheese, ketchup or salsa, roll up and enjoy!!
