Breakfast Burritos

A delightful breakfast dish made with Thrive sausage, potatoes, eggs, peppers and onions!!

Ingredients
- 1 Cup Thrive sausage
- 1 Cup Thrive Diced Potatoes
- 1 Cup Thrive Red Bell peppers
- 6 Thrive eggs ( mix 2 TBSP powder to 3 TBSP water for each egg)
- 1/2 Cup Thrive Onion Dices
- 1 Clove Garlic or 1 TBSP Thrive Garlic
- 6-8 TBSP Olive oil
- 1 tsp Salt
- 1 tsp Thrive Chef's Choice seasoning
- 8 Tortillas or Thrive Gluten Free crepes- See recipe
- Grated cheese as topping
- Ketchup or salsa as topping
Directions
- In a medium container add sausage, potatoes, peppers, onions and garlic. Add about 1 cup water to refresh. Put on a lid and shake then let sit for 3-5 minutes to refresh. Add olive oil to warm skillet and add the refreshed food to the skillet.
- While it cooks, mix the eggs and add to the pan. Add seasonings and cook until the eggs are done.
- Add filling to a tortilla or gluten free crepe. Top with cheese, ketchup or salsa, roll up and enjoy!!
