Breakfast Omelet

Ingredients
- 1/2 C THRIVE Sausage Crumbles
- 1/2 C THRIVE Red Bell Peppers
- 1/4 C THRIVE Chopped Spinach
- 1/4 C THRIVE Potato Dices
- 1/3 C Water
- 6 Eggs, Large or THRIVE Scrambled Eggs
- 2 Tbsp Milk or THRIVE Instant Milk
- 1 tsp THRIVE Chefs Choice
- 1/4 C Onions, Chopped
- 1/2 C Cheddar Cheese or THRIVE Cheddar Cheese
- 1 Tbsp Vegetable Oil
Directions
- Combine THRIVE items and water and set aside to soak for about 5 minutes.
- In a small bowl, beat eggs and milk together. Add seasoning and set aside.
- In an omelet pan, add oil and preheat on medium heat.
- Add onions and sweat until tender, then add vegetable and sausage mix and sauté for a minute.
- Pour half the egg mixture into pan and set layers by lifting and tilting pan to drain raw egg underneath to cook.
- Repeat process until the omelet is nearly set.
- Flip omelet over and sprinkle half the cheese into one side of omelet. Allow to set but not brown. Fold in half to serve.
- Repeat process for second omelet.
