Broccoli Cheese Soup - Carb Friendly

This broccoli cheese soup uses powdered chopped chicken or powdered vegetables to make the roux instead of flour.

Ingredients
- 2 tbsp. THRIVE Chopped Chicken - FD Powdered - vegetarian version use THRIVE Mushrooms FD or THRIVE Broccoli FD
- 2 tbsp. Butter, salted
- 1 tbsp. THRIVE Chopped Onions - FD
- 1 tbsp. THRIVE Chicken Bouillon
- 2 c. THRIVE Broccoli - FD
- 1/2 c. THRIVE Shredded Monterey Jack Cheese - FD or THRIVE Pepper Jack Cheese - FD
- 2 c. Water
- 1/2 c. Heavy Whipping Cream
Directions
- Prep
- Put the chopped chicken or vegetable of choice in a food processor and grind into a powder
- Combine all TL ingredients in one bowl, Broccoli, Shredded Monterey Jack Cheese, Chicken Bouillon and Chopped Onions in a bowl and put to the side
- Cook
- Melt the butter in a pot
- Add the powdered chicken (or powdered vegetable) to the butter to make a roux like paste
- Add all liquids to the pot and bring to a boil
- Once the liquids are boiling pour in all TL ingredients
- Let simmer about 3 - 5 minutes to get the broccoli to the consistency you like
- Salt & Pepper to taste: I did not add salt, as I felt the bouillon had enough to season the soup just fine.
