Caramel Banana Parfait

Butterscotch, bananas, candied pecans, salted caramel, and of course, our delicious brownies layered for a creamy parfait!

Ingredients
- Salted Caramel Sauce
- 2 c. Cane Sugar
- 3/4 c. Butter, salted
- 1 c. Heavy Cream
- 2 tsp. Kosher Salt
- Banana Custard
- 1 1/2 tbsp. THRIVE Instant Milk
- 3 tbsp. THRIVE Scrambled Egg Mix
- 1/3 c. Cane Sugar
- 1 tbsp. Pure Vanilla
- 1/8 tsp. Iodized Salt
- 2 tbsp. THRIVE Banana Slices FD - powder, blend bananas into a powder and measure out 2 tbsp banana powder
- 2 tbsp. Cornstarch
- 3/4 c. Heavy Cream
- 3/4 c. Water
- 1/2 c. Heavy Cream, whipped to stiff peaks
- 1/2 c. Salted Caramel, from recipe
- Banana Chocolate Brownie
- 1 can THRIVE Fudge Brownie Mix pantry can
- 1/2 c. Milk Chocolate Chips
- 1 c. THRIVE Banana Slices - blended into a powder
- 3/4 c. Water, hot
- Candied Pecans
- 1 1/2 c. Pecan Halves
- 1/4 c. Butter, salted
- 1/4 c. Brown Sugar
- 1/8 tsp. Cinnamon
- 1/4 tsp. Pure Vanilla Powder - Spice Can
- 1 tbsp. Water
- 1/4 tsp. Iodized Salt
- Caramel Bananas
- 2 c. THRIVE Banana Slices
- 1/2 c. Water
- 3/4 c. Salted Caramel, from recipe
Directions
- Salted Caramel Sauce
- Add sugar in an even layer over the bottom of a saucepan. Heat the sugar over medium high heat, whisk it as it begins to melt. The sugar will clump, but just continue to whisk it. Stop whisking once all the sugar melts down. Continue cooking until the sugar reaches a dark amber color. Take it off the heat and add in the butter all at once. Whisk until butter is melted and incorporated.
- Slowly pour the cream into the caramel. Whisk until cream is mixed in. Add in the kosher salt and mix in. Set sauce aside and let cool until ready to assemble parfaits.
- Banana Custard
- Add in all ingredients, except the whipped cream, and prepared caramel, into a small sauce pan. Bring up to a simmer, stir constantly. Once up to a simmer, simmer until thickened like pudding.
- Cool over an ice bath. Fold the whipped cream and cooled caramel into the cooled banana custard. Set aside until ready to assemble parfaits.
- Banana Chocolate Brownie
- Mix all together in a bowl and pour into a prepared 9x9 pan.
- Bake in a 350 degree oven for 15-20 minutes, or until toothpick comes out clean. Set aside until ready to assemble parfaits.
- Candied Pecans
- Place all ingredients together, except the pecans, in a small saucepan and cook until sugar and butter are melted, looking like caramel. Fold nuts into mixture.
- Pour out onto a Teflon baking pan and roast in oven at 350 for about 7-10 minutes or until sugar caramelizes on nuts. Set aside until ready to assemble parfaits. Try not to eat them all!
- Caramel Bananas
- Add bananas and water into a small saucepan and bring to a simmer. Turn off and cover for 1 minute. Drain water from bananas.
- Mix the caramel with the bananas and use warm or allow to cool.
- Assembly
- First, divide the caramel bananas between 8 cups. Second, crumble up brownies in a bowl and then divide it between the 8 cups. Third, Divide the banana custard between the 8 cups. Fourth, Divide the whipped cream between the 8 cups. Sprinkle with candied pecans and serve.
