Cheesy Potato Waffles

Cheesy potatoes grilled to perfection on a waffle iron!

Ingredients
- 2 tbsp Vegetable Oil
- 3 c THRIVE Potato Chunks
- 7 c Hot Water
- 1/2 c THRIVE Gluten Free Flour
- 1/4 c Lowfat Buttermilk
- 3 tbsp THRIVE Green Onions - Freeze Dried
- 1/2 tsp Baking Powder
- 2 Raw Whole Egg
- 1 c THRIVE Shredded Cheddar Cheese - Freeze Dried
- 1/4 tsp Baking Soda
- 1 dash THRIVE Chefs Choice
Directions
- Preheat the waffle iron.
- In a large bowl, whisk together the oil, buttermilk and eggs. In a separate bowl, mix together the Potato Chunks, Cheddar Cheese, Green Onions and water then stir and set aside. Once all items have refreshed, drain any excess water.
- In another bowl, mix together the flour, baking soda and baking powder. Once the potato chunks are soft, add all ingredients into one bowl and and mash until smooth.
- Add a scoop of the mixture to the greased waffle iron and cook until golden brown. Remove from waffle iron and top with a scoop of sour cream and Cholula sauce.
